Smashed Potatoes

Ingredients:
  • Sea salt, pepper
  • 1 large shallot, unpeeled
  • 2 tablespoons rice or soy milk
  • 6 to 7 small Yukon gold potatoes
  • 1 tablespoons clarified butter (Ghee)
Method:
Dice the unpeeled potatoes and then cook them in salted water. Cover the pot and cook until they become tender – about 30 minutes. Drain them well. Transfer them to a bowl and add the butter, milk, salt and pepper and then coarsely mash them together.

Cheesy Baked Potatoes

Ingredients:
  • Vegan sour cream for garnish
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon salt
  • 12 oz. of cooked potato wedges with skin
  • 1 teaspoon of paprika
  • 1/2 cup of shredded Daiya vegan cheddar cheese
Method:
To prepare this potato recipe, preheat the oven to 350 degrees. Place the potatoes in a large plastic bag that can be resealed. In a small bowl, mix the paprika, oil and salt. Pour the mixture into the plastic bag over the potatoes. Close the bag and then shake it to coat the potatoes. Place the potatoes in a single layer on a baking sheet covered with a sheet of parchment paper. Sprinkle the potatoes with the vegan cheddar cheese and bake until the cheese has melted. Put the potatoes in a large bowl and serve them with vegan sour cream.
